I cannot figure out how to set this role. There is no documentation on it.

Thank you for your interest in Azure Blockchain Workbench.

AllowedInstanceRoles is an attribute of a state transition.  It is a list of names of properties of the workflow inside which the transition is declared.  The transition is allowed to be executed by the user whose address is stored in a property specified in the AllowedInstanceRoles list.

You can find the reference for the Workbench configuration file here: https://docs.microsoft.com/en-us/azure/blockchain-workbench/blockchain-workbench-configuration-overview. The documentation for AllowedInstanceRoles is under the Transitions section. The sample in this document shows how to use AllowedInstanceRoles appropriately in the config .json file.
