We are trying to semi automate the creation of cubes / dimensions i.e. get away from BIDS and run a code which will create my cubes / dimension/ dsv connections, etc. for me. Is it possible?

Absolutely.  A cube can be scripted out in XMLA via SSMS...

A colleague of mine recently designed an SSIS package that would generate, deploy, and process SSAS (tabular) databases.  This was for a multi-tenancy architecture where each "client-site" had their own tabular database.  The SSIS package would make changes to a template XMLA script (ex. data source connection strings) based on values in a configuration-table in a SQL server database.  So all we had to do to deploy new client-sites was to add a few records to the configuration table and execute the SSIS package.
